Pesche col Vino Chianti

Peaches in Wine Chianti


Pesche al Vino, peaches in wine are one of those perfect combination of flavors. Especially if the peaches are ripe and full of flavor, and the wine is a young fruity red Chianti.
4 large peaches, ripe and firm
half lemon juiced
3 tablespoon sugar
1 bottle young Chianti wine
Cut each peach in eight wedges. Place in a bowl and add lemon and sugar. Mix gently and thoroughly. Set aside for 5 to 10 minutes.
Add enough Chianti wine to fully cover the peaches, approximately 3/4 of a bottle. Cover and place in the refrigerator for about 8 hours or overnight. Serve cold in individual cups or glasses.
