An Elegant Italian Menu

We are in January and most people becomes weight conscious after the Holidays. It wouldn’t appear be the best time to publish fat recipes for a formal dinner. But there are so many opportunities during the year to have nice gatherings with family, friends, and loved ones. Here are the recipes from the menu for my 2005 un-traditional Christmas Lunch. This soft potato mold took his name from the French “gateau”. Many Neapolitan preparations derive their names from French words such as Ragu’, Gatto’, Sciu’, Sartu’....
These cookies, called Rococo’ because of their donut  shape, are popular in  the countryside and in the modest farms of the Campania region. Simple, fast, and crunchy they are served mainly for Christmas.....
This simple cauliflower salad is typically prepared in Naples for the Christmas festivities and “reinforced” adding more ingredients to last until January.....
Marinara sauce is a basic meatless tomato sauce. In spite of the name (the word “marinara” refers to seafood), the sauce has no fish in it.
Minestra Maritata, literally translated as “Married Soup”, because all the ingredients “si sposano”, they blend or “marry” well together.
Naples is birthplace to pizza, but pizza is not only oven baked. Here is a traditional recipe for the less known but tasty fried “pizzelle”.

Neapolitan Cuisine is without doubt the most celebrated Italian cooking style. The cooking of the region of Campania seems to symbolize the most stereotypical Italian cooking. Campania is celebrated for the excellence of its pasta, many sauces such as Ragu’, Marinara and Puttanesca, the tomatoes, the fish and seafood, the Buffalo mozzarella cheese, the lemons and the Limoncello of Sorrento, and Naples is birthplace to pizza, the most popular food on hearth.
