There are very few recipes on my web site without step-by-step pictures. They all go back to the start of it, more than one year ago. They all belong to the page where we present the menus by regional style. It is time for me to take care of these recipes and bring them all up to the same standard.
Therefore this month we present the step-by-step recipes for a menu in the CENTRAL ITALY cooking style: Simple, hearty and abundant of fresh local produce.

Italians know the magic of a simple slice of crusty bread dressed with salt and good extra-virgin olive oil. It provides a use for stale bread and makes a good appetizer or snack between meals. Bruschetta definitely is the precursor of all “garlic breads” and the canapés.

When it comes to mushrooms nothing compares with the Porcini mushrooms. Fresh or dry they are they have a strong woodsy flavor. They are perfect with sweet fresh green peas in this tasty recipe.

Alla Cacciatora translates into “Hunter’s Style.” Game (such as pheasant, hare, and boar) can have a very strong taste, so the meat is marinated at length in vinegar, wine, and spices. Yet the way of cooking game in everyday cuisine has translated into some of the most tasteful recipes. Pollo alla Cacciatora is a good example.

Amaretti is the Italian name for macaroon cookies, which means “little bitter things”. In Italy they are done using 1 parts of bitter almond and 3 parts of sweet almond. Bitter almond is not available in the U.S. and bitter almond extract is used instead.
Learn about this great nuts and its bitter variety. Did you know that bitter almond contains Prussic Acid?
